Warm tomato and mushroom arugula salad

I like eating salads all year long, it is my go to lunch of preference. However when the weather gets cold I need something a warm and comforting. This salad is the best mix of both and still super easy to prepare.

Ingredients

  • 1 cup of mushrooms
  • 1 cup of cherry tomatoes ( You could use can tomatoes off season)
  • 1 garlic clove, crushed
  • 1 pinch of chili flakes
  • 2 tbsp of sherry vinegar (red wine or balsamic are also good)
  • 1/2 avocado
  • 2 tbsp of walnut (or any nut you like, just to give it a crunch)
  • 2 tbsp of olive oil
  • Salt and pepper

Directions

Heat up 1 tbsp of olive oil with the crushed garlic and red pepper flakes. Cut the tomatoes in 2 and wipe the mushroom clean and slice them.

When the garlic is fragrant add in the tomatoes and mushrooms. Cook for 5 minutes then add some slat and pepper.

Add the vinegar on high and let it simmer for a minute or two, just so it reduces a little.

Wash the arugula, drizzle the remaining tbsp of olive oil and add in al the other ingredients. Add some more salt and pepper and enjoy... A soft boiled egg or poached egg would be delicious here... And some homemade croutons as well!!!
