Warm tomatoes and sweet potato Italian salad

When I feel like a salad but it is still cold outside, I simply add warm ingredients to it and it does the trick!


  • 2 bunches of arugula salad
  • 1/2 cup of cherry tomatoes
  • 1/2 cup of garbanzo beans
  • 1 garlic clove
  • 1 tbsp of olive oil
  • 1/2 avocado
  • 1 cup of shredded cabbage
  • 1/2 sweet potato ( baked, I used leftovers)
  • Vinaigrette: juice form 1 lemon, 1 tbsp of dijon mustard, 1 tsp of maple syrup, 3 tbsp of olive oil
  • Broccoli sprouts to garnish


Cook the garlic with the olive oil for a minute or two and add the tomatoes. After 5-7 minutes, incorporate the garbanzo beans and cook until just warm.

Meanwhile combine all the vinaigrette ingredients in a mason jar and shake well.

Toss it all together with the arugula and add the chopped sweet potato, sliced avocados and some broccoli sprouts.

Simply plate and enjoy while still warm!
