I went to the farmers market today which I had not been able to for a while... I was so happy to see peaches, tomatoes, all the tender green lettuces.... I always inspires me for my meals for the week! I also get fresh fish and chicken from amazing vendors there, which means that both will be on the menu!!
Monday: Red lentil soup. I have been cravings lentils for a little while! Red lentils cook really fast and create a thick soup which is perfect. Maybe adding some baby spinach for extra greens and vitamins!! Crunchy baguette on the side to motivate my kiddos to dip it in the soup!
Tuesday: Tuna tartare tower. My mom used to prepare something similar when I was kid and I have been craving it! It is simple a tower of sushi rice, tuna tartare, edamame and nori!
Wednesday: Pesto grilled chicken with fresh-peach tomato salad and grilled broccolini. When grilling season is here I always make the most of it. The chicken is simply seasoned with salt and pepper. I grill it and add some pesto sauce while it is still hot on top so it melts. Fresh tomato salad with olive oil, basil, salt and pepper and a drizzle of red wine vinegar. Broccolini grilled that have been tossed with olive oil, salt and pepper as well, just until charred.
Thursday: Grilled artichokes, burrata peaches and prosciutto with bruschetta ( to use the tomatoes from last night). I loooooooove artichokes! Made mini purple ones last week and here I am simply steaming them, which is even easier! My children say it is all about the dipping sauce, to which I add a bit of honey!
Friday: Salmon miso. This is a classic from the blog, I have made it so often and it is always a success! I might make a cucumber salad and garlicky steamed spinach for a change!
Saturday: Eggplant pasta. My family loves pasta and really enjoy eating it once a week. This recipe is a good way to add in veggies for a more complete dish that everyone enjoys! I always make a nice salad since I don't always feel like eating pasta. Sometimes I simple add the sauce on cauliflower rice or quinoa for me, which would work great here!
Sunday: BLT lobster salad. This requires a bit of work to get the lobsters ready and de-shelled and I know we made lobster rolls last week, but it is my weakness and I love it so much! Just doing a different style this week!
