Fall is this week but it surely does not feel like it here yet. Still I can't help but crave soups and more hearty meals.... I will start slowly to incorporate them in our menus and see how my family reacts to it...

Monday: Zucchini Corn soup. I think I got the last of the corns for the season at the market today and I got quite a few so I need  to make the most of it. This soup is right on point and will be perfect! I think if you wanted to, you could swap broccoli for the zucchinis.

Tuesday: Tuna poke bowls. It has been a while since I've made poke bowls, I usually do it family style so everyone can make their own which is easy for me and very handy. The toppings are usually cucumbers, avocados, rice and or caulirice, seaweeds, ....I am using tuna here, but yellowtail or salmon work great as well....

Wednesday: Turkey ricotta meatballs with whole wheat pasta. Meatballs are amongst my kids fave dish. I like that I can easily go different routes here with spices, added veggies, sauce or not, the possibilities are wide! I like the add of the ricotta to it, it really brings a sort of freshness to it.

Thursday: Eggplant Parmesan. My friend Pamela Salzman gave me a recipe for a vegan ricotta made with cauliflower and cashews and it is to die for!!! I have been eating it with everything and my kids have no clue what it is in and they love it. I have to say that I did to think that they would go for it but I have made these a couple of times already and it is always successful. If you eat dairy, this recipe here with mozzarella looks super delicious!

Friday: 1 tray bake asian chicken and veggies. Easy enough dinner if I need a little break and don't feel like cooking too much. You can play around with the veggies here and add more or less according to what you want and have. Serve it with rice, on its own or with with veggie rice....

Saturday: Kale gnocchi lasagna. This is what I mean when I say fall kind of dish: comforting, delicious and hearty!

Sunday: Lemony grilled fish with corn zucchini tomato salad. Sunday is a good day to make fish since I get it form the farmers' market in the morning. I made this  a couple of times this summer and the sauce is what makes the dish.... If I can find corn again next week and then it will pair really nicely together... IF not, frozen corn is a great option...
