Got a few new recipes for this week that I am sure you will love as much I do. As usual these are super easy to prepare, family friendly and delicious. Even though it is summer and I have more time than doing school year, I want to enjoy my kids, so my motto remains the same :"Healthy, delicious and low maintenance recipes!!!" Here you go:

Monday:  Rainbow Barley Salad, which is perfect for meatless Monday... You can prepare the barley in advance as it lasts from few days in the fridge. Plus you can make extra and use it fro a "fried rice" type of dish or "risotto". If not, just freeze it and keep it for another time!

Tuesday:Turkey Meatballs with Summer Green Veggies. This is a new recipe, it is a one pot meal and is really delicious. When I make meatballs, I always make extra, either to use for school lunch or I freeze them for an emergency dinner when things get crazy!

Wednesday:  Quinoa and Grilled Veggies. I am really trying to get my kids to eat more veggies, sometimes it is all about how to present it. I tell them is is a new fried rice version and they love it... Make sure to check the log on Wednesday fro the recipe and my YouTube fro the video.

Thursday: Mini Herbed Goat Cheese and Summer Veggies Tartlets. These tarts are amongst my favorite things to make during summer and possibilities are endless, my kids things these are french pizza and love them!!! I have attached a version of this one and will post soon this one.

Friday: Shrimp and Tomato Spaghetti. I make this with either spaghetti squash or zucchini noodles for me.

Saturday: Chicken Milanese. This is easy enough for a Saturday and also good for a crowd...

Sunday: Beyond Meat Burgers. I am obsessed with the veggie burgers as they taste like the real deal!!! Another sneaky way to get my kids to eat veggies unnoticed. Mine will be lettuce wrapped and sriracha aioli with avocado, but kids like the buns....
