I love when days get longer and you can feel summer coming.... It means being outside more, using the grill more and lighter meals! I am keeping my Monday night soup dinner as I find it the easy to get my kids to have as many veggies as possible in one intake which makes it the right way to start the week.

Monday: Red lentil tortilla soup. I am making one of Pamela Salzman's recipe, I love the way she always puts a healthy twist on a a classic and it turns out delicious! Check out her website for more details!

Tuesday: Cauliflower gnocchi. Trader Joe cauliflower gnocchi are a statement around here! They are so delicious and easy to make, plus they are gluten free, so perfect for my daughter. There is not a specific recipe, juts cook them in a pan with a bit of olive oil and some sage, which taste delicious.

Wednesday: Fluffy omelet and greens. This is the new recipe this week, you will see how fluffy and light it turns out. It is halfway between a soufflé and an omelet. Check out recipe and video on my youtube and blog that day.

Thursday: Beef stir fry with broccoli. My kids always love Asian food and this has all the flavor with my personal healthy take on it! Adding some steamed broccoli with coconut aminos and sesame seeds for extra flavors!

Friday: Sesame chicken with couscous. Staying with the asian flavors here, instead of doing sesame chicken noodles, I am trying it out with couscous ( and quinoa for Marine) just to vary things.

Saturday: Chicken kebabs with greek pasta salad. After my stay at the the spa last week I have been wanting to try a few of the recipes they've made for me, this one was so yummy that I had to go for it and try a version of it, hopefully it will turn out as good as theirs. Stay tuned as I will share recipe and show how I do it that day.

Sunday: Veggie tart tatin. Easy enough for a Sunday night, served with a leafy green salad, this should make everyone happy!
