Today was mother's day, so let's keep the festivities going with the easy  recipes that take less then 15 minutes to prep, so we can all enjoy other things!

Monday: Spring Minestrone. This soup is so fresh, green with lots of fresh veggies.It is really delicious an d I am adding fresh herbs such as  basil and parsley which add so much depth to it.

Tuesday: Greek meatballs. My kids love meatballs any day of the week, the is s an easy prep with one roasted veggies. Sitcking also with the 15 minutes meals!!!

Wednesday: Roasted spatchcock chicken. This is the new video and recipe of the week. The dish is prefect when you have guest over and do not wan spend too much time int he kitchen. Make sure to check back on Wednesday fro full details!

Thursday: Greek spaghetti squash. I am teaching a class today and his is part of the menu. I promise to share all the recipes once these classes are done, and I have a feeling this is gonna be a hit!

Friday: Miso salmon. I posted this recipe a few weeks ago and my kids keep on asking for it. I serve it with coconut rice and cauliflower rice and peas!

Saturday: Turkey lettuce cups.  Kids love these, I always serve it with crudités and pickled veggies so they can make their own version of it!

Sunday: Brown rice penne with tomatoes and spinach. Using brown rice pasta for Marine (who is gluten free) and not adding beef this time, I like the break rom animal proteins. This is an easy recipe from my site,  I promise it is full proof easy and delicious!
