Summer is in full mode over here! Cooking lots of fresh and easy dishes... I am keeping it super simple this week, especially since all amy kids are away at camp and I am only cooking for 2!

Monday: White gazpacho with lobster. This soup is really easy to make and it takes very little time. All you need to do is putting it all in the blender, transfer to fridge for a little while and add some lobster or even crab meat, chopped up basil and done!

Tuesday: Grilled salmon Niçoise. Apart from grilling the salmon, boiling potatoes and green beans, everything else is just chopping and assembling. Speedy easy dinner!

Wednesday: Greek cauliflower pizza.  I am posting the new recipe and video of the week today. I am using store bought cauliflower crust and adding tons of fun and greek inspired toppings! You could also use flat bread, lavash of traditional pizza crust. It tastes amazing so be sure to check it out.

Thursday: Goat puffs. I can prep the goat puffs ahead of time and just assemble the salad and bake the puffs last minute. I like this because you can make the salad as easy or as elaborate as you want it to be! I will check out the farmers market on Wednesday to figure out how I could dress this one up!

Friday: Seared scallops with spinach and corn. I am taking advantage of the facts that my kids are not here, since this is not their favorite but my husband and I we do love it. I simply sear the scallops for 2 minutes on each side until golden brown, sautéing spinach with garlic and grilling the corn and done! I am linking a recipe that looks really good just if you need a bit more details about cooking scallops.

Saturday: Crab cakes. I will make bigger version of these mini ones with grilled veggies on the side, and also maybe a nice heirloom tomato and avocado caprese!

Sunday: Brown rice Asian noodles. I got 2 kids coming back and I know that this is something they love... I can't wait for Sunday!
