I cannot believe that school is around the corner! This means that meal planning becomes a must for me, being organized saves me so much time and stress! Honestly I do not know how I would do it otherwise.
Monday: Instant pot summer soup, which is perfect for meatless Monday... This super easy soup is full of veggies and my instant pot does the work for me. Since this is a new recipe, I will post the different steps on my insta stories on Monday and the full recipe as well!
Tuesday:Korean bbq beef lettuce cups. This is a variation of my beef korean recipe from eat blog. I use the same sauce to marinate the thin slices of beef, grill them and cut them into small pieces for the lettuce cups. I might make a asian slaw and a cucumber and peanut salad to go with it.
Wednesday: Chicken Slouvakis. I brought this one back from Greece and adapted it a little. It has so much flavor and is really easy to make!! This is the new video and recipe of the week so you'll have to circle back on Tuesday for the recipe and Wednesday for the video.
Thursday: Halibut packet with corn and tomatoes. This is the easiest way I know how to make fish. There is almost no cleaning and little mess. If you don't like corn or tomatoes switch them for something else like zucchini, spinach, mushrooms,... If you would rather have salmon than halibut, it works really nicely as well. It is a very easy recipe that can be modified in lots of different ways!
Saturday: Spaghetti all vongole. This is easy enough for a Saturday and my kids have been asking for it for a while. I don't think I have a recipe for this on the blog but literally what you do is sauté some garlic and chili flakes with olive oil and 1 large chopped tomato. Add a bit of cooking wine and the clams, cook until all the clams are open, sprinkle some italian parsley and toss with spaghetti!
Sunday: DYI Poke bowls bar I loving doing these, I just chop up all the ingredients and place it on the counter and everyone can make their own poke bowl.
