Can you believe it is August already.... I am keeping things easy this week as we are only 3 in the house because my boys are at camp. Most like it will just be my husband and me since my daughter is out a lot trying to enjoy her friends as mush as possible before leaving for college in a few weeks. We probably might go out on a date but I like to have the plan just in case we stay home.
Monday: Wonton soup, which is perfect for meatless Monday... This super easy soup is full of veggies and since I bought potstickers at the farmers market yesterday with some miso broth , it will be super easy dinner.
Tuesday:Korean bbq beef lettuce cups. This is a variation of my beef korean recipe from the blog. I use the same sauce to marinate the thin slices of beef, grill them and cut them into small pieces for the lettuce cups. I might make a asian slaw and a cucumber and peanut salad to go with it. I think I will use tofu for my version and if it turns out yummy then I will post the details later.
Wednesday: Chicken Slouvakis. A little taste of Greece that I adapted a little. It has so much flavor and is really easy to make!!
Thursday: Halibut packet with corn and tomatoes. This is the easiest way I know how to make fish. There is almost no cleaning and little mess. If you don't like corn or tomatoes switch them for something else like zucchini, spinach, mushrooms,... If you would rather have salmon than halibut, it works really nicely as well. It is a very easy recipe that can be modified in lots of different ways!
Friday: Zucchini turkey meatballs. I make this with either caulirice and peas or tabouleh.
Saturday: Spaghetti with shrimps. This is easy enough for a Saturday and my kids have been asking for it for a while. You simply sauté some garlic and chili flakes with olive oil and one large chopped tomato. Add a bit of cooking wine and the shrimps, cook until all the shrimps turn out a soft pink and are cooked through, sprinkle some Italian parsley and toss with spaghetti!
Sunday: DYI Poke bowls bar I loving doing these, I just chop up all the ingredients and place it on the counter and everyone can make their own poke bowl.
