Weekly meal plan

I am sill in full mode with clean eating, which I do most of the year anyway, but January especially! Since the weather is kind of "coldish" around here, I make the most of it with soups, stews and warming dishes!
Monday: Chestnut soup. I posted this one not so long ago and my kids have been asking for it no stop. Here is a creaminess and smoothness to it that makes it super comforting. The little croutons always add a fun note fro them:)
Tuesday: Veal Milanese. I haven't made this in a long time! I will base on the linked recipe but use veal from once, just to change since I think we eat chicken all the time. My twist would be to serve it with a veggie tomato rice. I will sauté some onions, small cubes of zucchini and chopped mushrooms, add the rice and tomato sauce and broth and cook it that way until al dente.
Wednesday: Ratatouille, with Italian chicken and quinoa with mushrooms and arugula. I am trying to get the kids to eat veggies as much as possible. I wan tot be sure that everyone stays healthy and has their immune system boosted up.
Thursday: Veggie pad see ew. This is a recipe from Half baked harvest. I love her cookbooks, I usually adapt her recipes and clean them up a bit to my family's taste.
Friday: Fish packets. This is super easy for dinner, I make the little packets ahead of time, keep them in the fridge and cook them when it is time for dinner.
Saturday: Turkey burger. This is always a winner with everyone! I have mine lettuce wrapped with avocado and a green salad! I might do sauté potatoes or air fried gnocchis for the rest of the family!
Sunday: Veggie lasagna from deliciously Ella. My favorite kind of Sunday night dinner, I make it ahead of time and just have to reheat it last minute!
