Weekly meal plan

It seems that this idea of speedy dinners for weeknight meals has generated a lot of positive feedbacks, so I am sticking with it! Soups for Monday as usual, which is my favorite way to start the week. The new weekly recipe on Wednesday with a super easy gnocchi lasagna (my kids' favorite) and a few sheet pan dinners.... Delicious and easy are the key words!

Monday: Cauliflower soup.  I make this soup in the pressure cooker which gets the job done in 10 minuets total! If you do not have an instant pot or pressure cooker, no worries, make it in a large pot and it just takes a little while longer but will be equally delicious! Finally, I add some coconut milk to make this user smooth and creamy with lots of good fats!

Tuesday: Turkey lettuce cups. This kind of DYI dinner is usually a winner in my family, my kids love getting their hands on with dinner! I might also add some cauliflower rice or brown rice on the side and pickled veggies.

Wednesday: Gnocchi lasagna. New weekly video and recipe, this is a good one and I am really excited about it. One pan is always a good way to go. I might make it vegetarian this time since we are having a protein most other nights this week. Come back on Tuesday fr full details and video!

Thursday: Sheet pan salmon. This is as easy as it sounds.

Friday: Italian chicken. This super easy dinner is packed with flavors. On top of the original recipe, I am also adding tomatoes, garlic, rosemary, thyme and finishing with fresh basil, you cannot go wrong here! Crispy baby potatoes might just be the perfect side dish here!

Saturday: Lemon butter cod.  This is from Half baked Harvest cookbook, another 1 pan dinner, packed with flavor and easy to make!

Sunday: Soba noodles with veggies  This is easy enough for a Sunday night which is what I need... Packed with veggies, ginger, soy sauce, sesame oil, it is kind of the soba version of fried rice! I am linking here my rice recipe and just swap the noodles (any kind of noodles you want). Finish with fresh cilantro and sesame seeds and maybe some green onions if you like that!
