Soups for Monday as usual, which is my favorite way to start the week. I am filming a bunch of new recipes on Tuesday so there is a bunch of new content coming your way soon!!! Delicious and easy are the key words!

Monday: Carrot soup.  I make this soup in the pressure cooker which gets the job done in 10 minuets total! If you do not have an instant pot or pressure cooker, no worries, make it in a large pot and it just takes a little while longer but will be equally delicious! Finally, I add some coconut milk to make this user smooth and creamy with lots of good fats!

Tuesday: Turkey lettuce cups. This kind of DYI dinner is usually a winner in my family, my kids love getting their hands on with dinner! I might also add some cauliflower rice or brown rice on the side and pickled veggies. I think I want to try a veggie version of this one based on this recipe but with more veggies than just mushrooms.

Wednesday: Gnocchi lasagna. I think this is one of the most popular recipe on my blog and that I ever taught in my classes. My kids were asking about it so her ewe go... I might make also a green soup as I am trying t stay away from carbs this week.

Thursday: Sheet pan salmon. This is as easy as it sounds. Roasted turmeric cauliflower as our side, which is simply cauliflower florets drizzled with olive oil, turmeric and paprika, some salt and pepper for 20-30 minutes at 400F.

Friday: Italian chicken. This super easy dinner is packed with flavors. On top of the original recipe, I am also adding tomatoes, garlic, rosemary, thyme and finishing with fresh basil, you cannot go wrong here! Crispy baby potatoes might just be the perfect side dish here!

Saturday: Lemon butter cod.  This is from Half baked Harvest cookbook, another 1 pan dinner, packed with flavor and easy to make!

Sunday: Burgers for the boys, roasted sweet potato fries, slaw, chips, crudités and guacamole, pumpkin brownies for Super Bowl Sunday... I am trying to make a little something for everyone here.... It is easy to guess who are the sweet potato fries for :) My friend Pamela Salzman makes parsnips fries and a lot of my friends swear by them, I might try that as well.... I want to make a blueberry nice cream as well, stay tuned for that one.
