White Bean and Spinach Soup

This is a nice soup for spring, full of veggies and as usual easy to prepare!


  • 1 leek, white part only, finely chopped
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled, and cut in small pieces
  • 1 zucchini, peeled and cut in small pieces
  • 1 large can of white beans, drained and rinsed
  • 1 big bunch of baby spinach
  • 6 cups of veggie stock
  • 3 tbsp of olive oil
  • Parmesan to serve
  • Juice form 1 lemon


Sauté the onion, leek, garlic and carrot with the olive oil for 5-7 minutes.

Add the stock, zucchini and beans and bring to a boil, then simmer for 8-10 minutes. Right before serving add some salt and pepper and the spinach.

Grate some fresh parmesan cheese for extra flavor and maybe a splash of fresh lemon juice for extra freshness!!
