White Bean and Kale Soup

Monday night soup with a new favorite this week! Sprinkle some parmesan cheese to make it even tastier!!!!


  • 2 tbsp of olive oil
  • 1 onion, chopped
  • 1 garlic, minced
  • 2 cans of italian beans, drained and rinsed (any white beans work here)
  • 4-5 cups of veggie or chicken stock
  • 1 bunch of kale, washed, stem removed and roughly chopped
  • Salt and pepper, to taste
  • Parmesan cheese to garnish ( optional but delicious)


Heat up the olive oil in a pot, add the onion and garlic and stir for a minute or 2. Mash completely the beans from 1 can and add to the pot with the stock some salt and pepper and bring to a boil.

Stir in the remaining beans, kale and simmer for 10-12 minutes until the kale is tender.

Serve and grate some parmesan on top!!
