White fish ceviche

This a super fast and really nice back or appetizers in the summer time. You can use different fish such as almost or tuna, shrimps, even scallops,.... I am using sole here, it has quite a mild flavor and made for a great snack especially with taro chips or tortilla chips!

Ingredients

  • 1/2 pound of white fish
  • 1 lemon
  • 1 lime
  • 2-3 green onions, wash and thinly chopped
  • 1 jalapeño or red piment, cut into small squares (remove or not the seeds depending go how spicy you want it)
  • 1/4 cup of cilantro
  • Salt and pepper
  • Olive oil
  • Serve with tortilla chips or taro chips

Directions

Cut the fish super thinly, toss toggery with the zest and juice of both the lime and lemon. Add a drizzle of olive oil, the chopped onion and jalapeño, some salt and pepper. Leave to rest and "cook" in the fridge fro 5-7 minutes, no more than 10 otherwise it might become rubbery.

Transfer the fish to a nice serving dish and add the cilantro and possible more salt and pepper to taste. Serve with some chips and a nice glass of chilled white wine!
