White Gazpacho with Lobster

This is so fresh and subtle... I added lobster because I love the combination but shrimps or crab would work great as well here. Or even on its own... All you need to do is put it all in blender and then it the fridge, add the lobster and it is ready!!
Combine all the ingredients (except the toppings) in powerful blender. Process until completely smooth.
Transfer to the fridge and let it cool for at least 15-20 minutes.
Laddle in bowls and top with lobster meat ( or crab or grilled shrimps) some chopped basil leaves and a drizzle of olive oil.
