Wild cod burger that your kids will love

Makes 5 burgers

I always try to find ways to get my kids to eat fish and enjoy it. They love salmon and soles and sushi so we're good. However since I always try new things I want them to learn to appreciate new favors and be adventurous.... This cod hit the spot, they were all so surprised how much they LOVED it!!! Definitely making it again soon

Ingredients

  • 1 1/2 lb of cod ( or any white fish)
  • 1 egg, beaten
  • 1/3 cup of breadcrumbs
  • 2 green onions
  • 1/4 cup of fresh Italian parsley, chopped
  • 2 tsp of dijon mustard
  • 1/4 tps of garlic granules
  • 1/4 tsp of chili powder
  • Salt and pepper
  • 5 burger buns
  • Optional: Sriracha aioli or tartare sauce to serve
  • Corn salsa: 1 1/2 cup of corn, 1 cup of cherry tomatoes, 1 green onion, olive oil, red wine vinegar, salt and pepper

Directions

I use the food processor here which makes this recipe really super easy!!

Roughly chop the fish and place in the food processor and pulse until you get small pieces. Transfer to a bowl. Chop the green onions and parsley (they also can be done in the food processor) and mix with the fish as well as all the other ingredients (except for the corn salsa).

Form into 5 medium size patties and sprinkle a bit more of breadcrumbs, it adds a nice crunch.

Heat up a large pan with 2 tbsp of avocado oil and cook on medium for 3-4 minutes on each side. Don't move them around too much, you want them to caramelize.

While the burgers cook assemble the corn salsa and leave on the side.

When ready start to assemble by placing the burger on the bun, spoon some corn salsa on top and drizzle some tartare sauce or sriracha aioli!!
