Wild sea bass with fresh herbs, lemon, caper sauce

I always try to get my kids to eat fish and I find that whenever I serve it with some sort of fresh sauce it always works better! This could go with any fish and even chicken I guess!!!

Ingredients

  • 5 small filets of white fish
  • 1 lemon
  • 1 bunch of Italian parsley
  • 1/4 cup of green olives
  • 1 tbsp of capers
  • 1 tsp of red wine vinegar
  • 1/2 cup of fresh basil leaves
  • 2-3 sprigs of fresh thyme
  • 1 green onion
  • 1/4 cup of olive oil (+2 tbsp)
  • Salt and pepper
  • 1 cup of cherry tomatoes, cut in 2

Directions

Season the fish with salt and pepper on each side.

In a large pan heat up the 2 tbsp of olive oil and cook the fish on each side fro 3-4 minutes until flaky and cooked through. The heat should be on high first then lower to medium and cover. This also depends on the thickness of the fish.

In a food processor zest and juice the lemon, add all the herbs, the vinegar, the olives, capers, some salt and pepper and turn on until blended and smooth. The sauce will keep for a few days in the fridge easily.

Serve the fish with a generous spoon of the sauce and a couple of cherry tomatoes on each piece and enjoy!
