This is the ultimate cold weather comfort food. It would look beautiful on your dinner table for a special occasion and is easy enough for a weeknight meal!

Ingredients

  • 6 chicken thighs, boneless, skinless
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 shallot, minced
  • 3 garlic cloves, minced
  • 1 small sweet potato, peeled and cut into small cubes
  • 2 sprigs each of thyme and rosemary
  • 1 cup of cream (oat milk works great here)
  • 1 can of biscuit dough
  • Salt and pepper to taste
  • 2-3 tbs of olive oil

Directions

Preheat the oven at 375F.

In a large cast iron, heat up the olive oil and cook the chicken on high fro 2-3 minuets on each side. You want to create a nice crust and build up the flavor. Remove the chicken on a plate add all the chopped veggies in the pan. Stir for a bit scraping the chicken bits stuck on the bottom of the pan.

Transfer the chicken back to cast iron and generously season with salt and pepper ( I usually do at least 1 tsp of each). Add the cream, stir and finally add the biscuits dough all over.

Bake for 18-20 minutes, until the biscuits are golden brown and flaky and the chicken is cooked through.
