This easy dessert is so yummy and so easy to assemble. I am using a mix of greek yogurt and whipped cream to lighten it up a bit. I am also adding a few twists to make it even tastier for my family.


  • 5-8 store bought small meringues
  • 2 cups of greek yogurt
  • 2 persimmons, finely chopped
  • 1 cup of pomegranate seeds
  • 1 cup of whipping cream
  • 2 tsp of vanilla extract
  • 2-3 tbsp of freeze dry raspberries
  • Grated dark chocolate (optional)


crush roughly the meringues in a alaghe bowl.

With a hand mixer, whip the cream in a bowl with 1 tsp of the vanilla extract until it thickens.

Combine the remaining vanilla extract with the greek yogurt.

Start assembling in 5 glasses.

Layer 2-3 tsp of greek yogurt followed by a mix of persimmons and pomegranate, some crushed meringues and finish up with a big dollop of whipped cream. I like to grate some dark chocolate on top to make it look nice and taste even better. Repeat until all 5 glasses are done.

This dessert taste better if made almost right before eating it but you could easily have all the ingredients prepped up ready to be assembled.

Feel free to mix up the fruits, use only yogurt or whipped cream, you can't really got wrong with this one.
