I am always on the hunt for an easy and neutrons lunch on the go for the kids. This is trending on social media right now and I find it genius!! You can use whatever food you have at your disposal.
You can use hummus, make a full vegetarian one, go big on meat, do it Italian style, Mexican style, I mean possibilities are endless! You can even make a sweet version of it!!

Ingredients

  • 1 large tortilla (the ones they for burritos)
  • 2 slices of cut meat (I used turkey)
  • 1/4 of avocado
  • 1 bunch of baby spinach
  • 1/3 cup of mozzarella
  • 2 tbsp of pesto sauce

Directions

Using a knife, starting at the center of the tortilla cut it downwards.

Arrange your ingredients in triangle shapes on all 4 parts of the tortilla. Try to keep them a bit separate just so it will be easier to fold and less messy.

Starting with the bottom left part, fold in 2 going up, then fold again to the right and finally down, so you have kind of layered triangle shaped wrap/sandwich.

In a dry pan on medium heat cook it fro 2 minutes on each side, so everything warms up inside and the cheese can melt. Serve with crudités or a dipping sauce or on its own.
