This one is so yummy, super moist and flavorful. I think the combo of the yogurt, apple and fall spices go so well together! I highly recommend it


  • 3 eggs
  • 3/4 cup of organic granulated sugar
  • 1 cup of plain greek yogurt
  • 1/2 cup of olive oil
  • 1 tsp of vanilla extract
  • 1 1/2 cup of flour
  • 1 tps of baking powder
  • 1 tsp of cinnamon
  • 1/4 tsp of salt
  • 4 apples


Preheat the oven at 350F and grease a round spring form baking pan.

Mix the eggs and sugar together with a hand mixer until smooth and frothy. Add in the yogurt, vanilla and oil and mix for another minute or so.

Combine the dry ingredients and slowly add them to the wet ones (don't over mix it otherwise you will end up with a tough dense cake).

Peel all the apples, chop into cubes 3 of them and slice the last ones. Incorporate the apple cubes to the batter. Transfer to the pan and top with the apple slices.

Bake for 50-60 minutes or until a toothpick comes out clean.

Serve with whipped cream or greek yogurt. I have this for breakfast with yogurt and a drizzle of nut butter and it is SO SO SO good!
