Zucchini corn fritters

Makes 12 fritters

These are great for lunch with a green salad, a fried egg, some avocado slices or even with sweet chili sauce on their own. They freeze well and are a kids favorite, so be sure to make extras!

Ingredients

  • 3 cups of frozen corn, thawed
  • 2 medium zucchini
  • 1 green onion
  • 1 egg
  • 4 tbsp of flour (any kind you want)
  • Salt and pepper
  • 2 tbsp of hummus (optional but delicious)
  • Toppings: fried eggs avocado, sweet chili sauce, sriracha, salad,...

Directions

Place 2 cups of the corn, with the zucchini and onion in a food processor and pulse until shredded. Add the egg, flour, hummus and some salt and pepper. Whizz until a nice batter gets together. Add the remming cup of corn and combine.

Heat up a large frying pan with 2 tbsp of avocado oil and spoon the fritters with 1/4 measuring cup. Flatten a bit and cook for 3-4 minutes on each side. Repeat until you used all the batter.

I have used this combination of veggies because his is what I had at hand but feel free to mix it up with what you like or have in your fridge and pantry.... This can fo many different directions!!!
