Zucchini pea fritters

These are super delicious and full of goodness. You can easily switch the veggies if you want to mix it up. Carrots, leeks, sweet potatoes, spinach, corn,.... Lot soft possibilities
Grate the zucchinis and place them in a coliander with some salt for 10-15 minutes to allow them to release their liquid. Rinse and squeeze them as much as possible.
Mix everything in a large bowl until combined.
Heat up 2 tbsp of avocado oil in a large pan and spoon some of the batter. Leave to cook for a couple of minutes then flip on the other side for another minute or two. Repeat with the rest of the batter.
These keep on the fridge for a couple of days or in the freezer for a few weeks. They make a great lunch, brunch, school lunch, snack....
Next time I will try to make them with chickpea flour for extra proteins! Or maybe dip them in hummus...
