Zucchini and Peas Waffles

These are so easy to prepare and make the best school lunches for my boys! They freeze well so I always make extra and store them!


  • 1 cup of flour (I used spelt, but whole wheat also works)
  • 2 large eggs
  • 1 medium zucchini, grated
  • 1 cup of peas (frozen thawed)
  • 1/3 cup of water ( you may need less or more depending on the consistency you like, start slow and keep on adding)
  • 1/2 tsp of salt and 1/2 tsp of pepper


In bowl, whisk together flour, salt, pepper, eggs, and water until just combined; fold in the peas and zucchini.
Heat a waffle iron and add some avocado oil; drop 1/4 cup of batter into waffle maker. Flatten slightly; cook until browned, 3 to 4 minutes per side. Add more oil if needed.
Be sure to make extra because they freeze well!
