Makes 1 quiche

I have quite a few quiche recipes on the blog since it is something I often make on week-ends and come up with a new version almost every time. Quiche is basically some kind of crust, filled with eggs and whatever veggies, cheese or meat you think might taste good. I usually empty my fridge with what needs to be eaten... Keeping in mind flavors that go well together obviously!!

Ingredients

  • 1 puff pastry sheet (store bought, thawed)
  • 8 eggs
  • 1 large zucchini
  • 3-4 sliced of turkey bacon (or regular one if you prefer)
  • 2-3 tbsp of feta cheese, crumbled
  • Salt and pepper

Directions

Preheat the oven at 400F.

Line up a pie dish with the puff pastry. In a large bowl break the eggs, whisk them and add some slat and pepper.

Chop the zucchini into small cubes as well and the turkey bacon and toss in the egg mixture.

Pour into the pie and sprinkle the feta on top. Bake for 40-45 minutes until the eggs are cooked and the puff pastry looks golden brown and flaky. Serve with a nice leafy green salad and enjoy!  Keep the leftovers, they reheat nicely for a lunch the following day!
